Certificate III in Patisserie at AIBT is tailored for aspiring pastry chefs, providing comprehensive skills and knowledge in patisserie production. The course empowers students to excel as pastry chefs or pâtissiers, fostering expertise in creating diverse and delectable desserts. Learn the art of producing high-quality pastries, cakes, and bakery goods while cultivating teamwork in kitchen and hospitality environments. The practical application of skills occurs in the specialized Patisserie kitchens at the Meadowbank Campus, conveniently located near Meadowbank Train Station.
This program encompasses theoretical understanding and hands-on training in patissier preparation and presentation techniques. Students master a range of fine patisserie skills through practical work under the guidance of qualified Patisserie trainers. The curriculum includes an industry work placement to provide valuable on-the-job experience in a pastry kitchen, patisserie business, or bakery. Upon completion, graduates can pursue various roles in organizations such as patisseries, restaurants, hotels, catering operations, clubs, pubs, cafes, and coffee shops. Potential job titles include Pasty Chef, Patissier, and Chef de Cuisine.

To enroll in Certificate III in Patisserie, applicants must collect the following before applying:
- Minimum 45% in High School – 10 + 2
- Letter of Recommendation
- English Language Proficiency Requirements (IELTS Overall 5.5 (no band below 5.0)
- Transcripts of all previous academic degrees (To be translated in English and approved by the translator
